Celery Soup

Celery, one of the three basic vegetables in a classic French mirepoix, makes a creamy sweet blended celery soup. The addition of the other two “holy trinity” ingredients, carrots and onions, balances out the flavors and aromatics of this surprisingly creamy celery soup.

  • 2 tbls. olive oil
  • 3 celery stalks
  • 1/4 clove garlic
  • 1/2 small onion, chopped
  • 1/2 small carrot
  • 1-1/2 cups vegetable or chicken stock
  • 1/2 bay leaf
  • 1/4 cup cashews
  • 1/2 tsp. powdered ginger
  • 1 tbls. sugar or honey (optional)
  • 1 cup spinach or a small bunch of parsely (optional)
  • Salt and black pepper to taste

Add all ingredients to a high power blender and blend until hot. If using a conventional blender you should lightly satuee the celery, carrots and onion before adding to the blender.
